Ingredients

  • 170 g Margarine
  • 85 g Dark brown sugar
  • 55 g Caster sugar
  • 3 large eggs
  • 56 g of pureed chestnuts- I used merchant gourmet brand
  • 170 g Self raising flour
  • 1/4 tsp baking powder
  • 1/2 Tsp ground Cinnamon
  • 2 tbsp milk
  • Poaching Pears
  • 3 pears- peeled, stalks not removed
  • 500 ml mulled wine
  • 100 g caster sugar
  • 1 Cinnamon stick
  • 2 Star Anise
  • 140 g pureed chestnut
  • 200 g salted butter
  • 200 g icing sugar
  • 1/4 Tsp cinnamon powder
  • 1-2 Tbsp water
