Ingredients

  • 1 tbs plus 1 tsp cornstarch
  • ½ cup chicken broth
  • 2 sprigs rosemary
  • 4-6 small to medium potatoes, scrubbed and halved ( you can leave small ones whole)
  • 2-3 carrots, cut into large, chunky pieces
  • 1 lemon, cut into wedges
  • 1 medium yellow onion, cut into wedges
  • Salt and Pepper
  • 1 (3-pound) chuck beef roast trimmed of excess fat
  • 4 garlic cloves, smashed
