  • 1 cup pitted dates {about 10 whole dates}
  • 1 cup very hot water
  • 1 (15 oz) can chickpeas, washed & drained {about 1 1/2 cups}
  • 3 TBSP almond butter
  • 1 TBSP vanilla extract
  • 1/4 tsp almond extract
  • 1/4 tsp salt
  • 1/8 tsp baking powder
  • 1/4 cup oats {regular or quick}
  • 1/4 cup unsweetened coconut, divided
