  • 60 g of butter (1/4 cup)
  • 55 g of white shortening (1/4 cup)
  • 220 g of soft light brown sugar (1 cup packed)
  • 1 medium free range egg
  • 210 g of plain flour (1 1/2 cups)
  • 1/4 tsp salt
  • 1/2 tsp soda
  • 1/2 tsp cream of tartar
  • 1 TBS water
  • 75 g of dessicated coconut, unsweetened (1 cup)
  • 1 tsp coconut extract
  • 12 candied cherries cut in half
