Ingredients

  • 3 cans of no salt added chicken breast, drained
  • 1/2 cup 2% plain greek yogurt
  • 1 tsp dijon mustard
  • 1 small cucumber, peeled, seeded, and diced
  • 1 carrot, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 cup slivered almonds
  • 1/4 cup shredded coconut
  • 10-12 California Dried Plums, finely chopped
  • 1 1/2 tsp curry powder
  • 1/4 tsp ground coriander
  • 1/2 tsp orange zest
  • 1/2 tsp garlic powder
  • salt and pepper, to taste
