Ingredients

  • 1-1/2 cups granulated sugar
  • 2/3 cups safflower oil
  • 1/4 cup almond milk
  • 1/4 cup lemon juice
  • 3 tbs lemon zest
  • 2 tsp vanilla extract
  • 1 cup of white whole wheat flour
  • 2 cups all purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup of unsweetened shredded coconut
  • 1 tbsp of safflower oil
  • 1 1/2 cups confectioner’s sugar
  • 2 tbsp almond milk
  • 1 hour or until a knife inserted through the cake comes out clean.
