Ingredients

  • 12 or
  • Crust
  • 2 cups whole pecans or walnuts
  • 1 cup packed pitted dates
  • 2 tablespoons brown rice or buckwheat flour
  • 4 tablespoons melted vegan butter (Earth Balance sticks make it easy to measure) or coconut oil
  • Filling
  • 16 ounces (2 packages) organic cream cheese or Tofutti “cream cheese”
  • ½ cup light coconut milk
  • 2 tablespoons lemon juice
  • ½ cup real maple syrup
  • 1 scraped vanilla bean pod or 1 teaspoon vanilla paste
  • 2 teaspoons ground cinnamon
  • 3/4 teaspoon ground cloves
  • 2 tablespoons organic cornstarch
  • 2 large organic eggs (or 1 tablespoon chia seeds soaked in the coconut milk)
  • Topping
  • 6 large apples (Red Delicious, Braeburn or Granny Smith work well here)
  • Juice of 1-2 lemons
  • 1 teaspoon vanilla paste or extract
  • 1 teaspoon ground cinnamon
  • 2 tablespoons cold vegan butter or unsalted organic butter
  • ½ cup coconut sugar, honey or maple syrup
