Ingredients

  • 125 g raspberries
  • 100 g white sugar
  • 150 g digestive biscuits - the base was too wet so we added a couple more biscuits to get the right texture
  • 90 g butter, melted
  • 250 g mascarpone cheese
  • 250 ml crème fraîche
  • 2 tablespoons icing sugar - we used
  • 4 tablespoons
  • 1 teaspoon vanilla bean paste
