Ingredients

  • 1 ¼ cups filtered water
  • ½ teaspoon fine sea salt
  • About 2 tablespoons extra virgin olive oil or cold-pressed canola oil, for frying
  • 1 tablespoon extra virgin olive oil
  • 10- ounce package of sliced cremini mushrooms
  • ½ teaspoon dried thyme
  • 1 large garlic clove, minced
  • ¼ teaspoon fine sea salt
  • A few turns of freshly ground black pepper
  • About 4 cups arugula
  • 1 cup raw cashews, soaked overnight, drained and rinsed
  • 1/2 cup filtered water
  • 2 tablespoons freshly squeezed lemon juice (1 lemon)
  • ½ teaspoon fine sea salt
  • A few turns of freshly ground black pepper
