  • 2 pounds fresh pole beans
  • 1 or 2 slices thick-cut smoked bacon
  • Olive oil
  • 1 small onion, chopped
  • 1 to 1 1/2 cups chicken stock
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • pinch of sugar
  • 1 teaspoon cider vinegar
  • 1/2 cup chopped red bell pepper
