This is my abbreviated and modernized version of the Filipino mung beansoup which I made with bacon and fresh rocket leaves which are added just before serving for a fresh dimension
Knockoff of the popular Campbell’s Bean with Baconsoup. And when I set out to make this soup, I’d been kvetching a little bit because the kind of beans in the Campbell’s version are navy beans or pea beans
This ham and beansoup is creamy, and chock full of ham, beans, bacon and cheddar. I was so inspired by how I got the creamy consistency with the Broccoli Cheddar Soup that I decided to do the same thing with this beansoup
Drizzle with extra virgin olive oil and season with salt & pepper. By the way, I also rinsed all the cannellini beans - adding all that starchy, sodium-ridden liquid was not all that appealing to me
Replace bacon with turkey or chicken. For a completely different soup, replace the potato with sweet potato and add 1/2 tsp mild curry powder and 1/2 tsp cinnamon
Copycat Olive Garden Minestrone Soup. This white bean and kale soup is so healthy and low fat. Add remaining beans and broth to a food processor or blender and pulse until smooth
For a bacony flavor, some of the vegetarian soy-based bacon isn’t too bad so you might want to consider using some of that if you desire a smoky flavor in the soup
Using a slice of bacon, wrap it around the center of the beans to hold it together. Wash and thoroughly dry green beans, then season with salt and pepper
