Ingredients

  • 1½ cups whole wheat pastry flour
  • 1½ cup cornmeal
  • 11 tablespoon aluminum-free baking powder
  • 1½ teaspoon sea salt
  • 11½ cups unsweetened, unflavored plant milk
  • 11⁄4 cup unsweetened applesauce
  • 11 medium red bell pepper, seeded and finely diced
  • 11 (10-ounce) package frozen corn kernels, thawed
  • 11 cup cooked or canned black beans, rinsed and drained
  • 16 green onions, white and light green parts thinly sliced
  • 1 Tomato Salsa (or use store-bought), for serving
  • 1 Sour “Cream" for serving
  • 1 chopped fresh cilantro, for serving
