Ingredients

  • Cornmeal Crust with cardamom(make 2 large free form gallettes)
  • 2 sticks cold butter, cut into small cubes
  • 1 1/3 cups all purpose flour
  • 1 1/3 cup cornmeal
  • 1 tbl sugar
  • 2 tbl brown sugar
  • 1 tsp cardamom
  • 8 tablespoon chilled water
  • 2 tbl cornmeal for dusting
  • Fillings
  •  
  • Peach Gallette
  • 1 cup fat free ricotta cheese (or use Farmer's Cheese)
  • 1 egg yolk
  • 1 tbl sugar
  • 1/4 tsp vanilla
  • 2-3 ripe peaches
  • 2 tbl brown sugar
  • Blueberry Gallette
  • 1 1/2 -2 cups blueberries, washed
  • 2 tbl brown sugar
  • For Both Gallettes
  • 1/2 cup quick oats or crushed vanilla cookies
