Ingredients

  • 2/3 cup uncooked quinoa
  • 1 pound lump crab meat (no imitation crab!)
  • 1 jalapeno, minced (seeds discarded)
  • 1 small sweet yellow onion, diced
  • small handful of fresh parsley or cilantro, chopped
  • 1 clove garlic, minced
  • 2 eggs, lightly beaten
  • 1 tablespoon white wine vinegar
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon coarse salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Old Bay seasoning
  • 1 teaspoon smoked paprika
  • 1/2 cup Panko bread crumbs
  • 2-4 tablespoons olive oil
  • 2 avocadoes
  • 1/4 cup sour cream
  • 1 tablespoon lemon juice
  • salt and pepper to taste
