Ingredients

  • 2 tablespoons butter
  • 2 tablespoons all purpose flour
  • 2 cups milk
  • 3/4 cup half and half
  • 1/2 onion 1 1/2-2 teaspoons mild hot pepper sauce, such as Frank’s
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon paprika
  • 1 four inch long strip of lemon zest, removed with a peeler
  • 1/2 teaspoon salt
  • 1 pound lump crabmeat, picked over to remove shells and cartilage
  • 1/4 cup crab roe or 2 egg yolks (optional)
  • 2 tablespoons dry sherry
  • 1 teaspoon chopped fresh chives
