Ingredients

  • 5 lbs white button mushrooms whole, blanched
  • 5 cups mushroom broth (blanching liquid)
  • 1-2 diced onions
  • 1/2 tsp herbes de provence (or substitute thyme)
  • 6 tablespoons butter
  • 5 tablespoons whole wheat flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon salt black pepper
  • 2 cups half n half
  • 2 tablespoons orange juice (sherry substitution)
