Ingredients

  • 15 minutes
  • 30 minutes
  • 2 garlic cloves
  • 1 medium size onion
  • 2 tbsp extra virgin olive oil
  • 2 medium size potatoes
  • 6 celery stalks
  • chopped
  • 2 chopped stalks
  • 6 cups vegetable broth
  • 1 1/2 cup
  • 4 scallions
  • Salt and pepper to taste
  • 1. Bring a medium pot of water to boil and add potatoes. Boil the potatoes until cooked through.
  • 4 chopped celery stalks and cook for another
  • 4. Add vegetable broth, stir and bring to boil
