Creamy Greek-Style Pea Sou

  • 2 tbsp olive oil
  • 1 oz onion
  • 4 cloves garlic
  • 8 cups chicken stock
  • 2 cups green split peas
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh parsley leaves
  • 1/4 cup yogurt
  • 1 lemon juice


    1. Heat oil in a large pot, sauté minced onions and garlic until fragrant.

    2. Add the peas and sauté for 2 minutes. Lightly season with salt and pepper.

    3. Add the stock and bring to a boil. Reduce to a simmer for about 20 minutes.

    4. Using a food processor or immersion blender, blend the peas.

    5.Add parsley and mint and blend again until smooth.

    6. Stir in lemon juice and bring to a simmer.

    7. Season with salt and pepper.

    8. And add the yogurt before serving.

    9.Serve with a crisp pierogi and light white wine.
