Ingredients

  • 12 medium parsnips, peeled
  • 1/2 cup ricotta cheese
  • 1/2 onion, finely chopped
  • 1 teaspoon ground cardamom (best to buy seeds and grind yourself for the most flavor)
  • Salt and pepper to taste
  • 1/4 cup dry bread crumbs
  • 2 tablespoons butter or margarine, melted
  • 1 teaspoon paprika
