  • Ingredients 4 chicken breasts, pounded 1/2" thick kosher salt Freshly ground black pepper 1 1/2 c. panko bread crumbs 1/2 c. freshly grated Parmesan 2 large eggs, beaten 2 tbsp. extra-virgin olive oil 2 tbsp. canola oil 4 oz. fresh mozzarella, thinly sliced 1 1/2 c. marinara sauce, store-bought or homemade 1 c. grape tomatoes, halved 1/4 c. freshly chopped basil, plus more for garnish
