  • Crispy Chicken Thighs with Garlic Potatoes and Carrots
  • 4 bone in, skin on chicken thighs
  • 1 tablespoon vegetable oil
  • 1 medium/large onion diced
  • 5 cloves garlic, minced
  • 2 tablespoons red wine vinegar
  • 1 lb baby potatoes
  • 1 lb carrots (cut in half, then cut in half again)
  • 2 tablespoons minced rosemary
  • salt/pepper
