  • Greek yogurt (nonfat or lowfat okay)
  • buttermilk (lowfat okay)
  • chopped fresh mint, divided
  • minced fresh garlic
  • crushed red pepper flakes (optional-- adds spice)
  • medium, thin white fish fillets (about 1 lb.) - tilapia, trout, or red snapper
  • flour, or King Arthur gluten free multi-purpose flour
  • grapeseed or olive oil (I prefer grapeseed for frying)
  • paprika
  • Salt and pepper
  • 4 sprigs of mint for garnish (optional)
