  • 1/2 cup plain Greek yogurt
  • 1/4 cup chopped fresh herb mix, such as chives, thyme,
  • parsley, and rosemary
  • 2 large garlic cloves, finely chopped
  • 1 tbsp fresh lemon juice
  • 1/4 cup extra virgin olive oil
  • sea salt
  • freshly ground black pepper
  • 2/3 cup panko, or other fine,
  • dry breadcrumbs
  • 1/3 cup cornmeal
  • 1 large egg
  • 1 tsp Dijon mustard
  • 2/3 lb skinless orange roughy (or cod) filet, cut crosswise
  • into 1-inch-wide strips
  • 2 tbsp peanut oil
