  • 2 cups peeled and grated Idaho Russet Potatoes (approximately 1-1/2 pounds potatoes)
  • 1/2 cup grated brown onion
  • 2 teaspoons finely chopped garlic
  • 2-1/2 tablespoons finely chopped jalapeño pepper, seeds removed
  • 1/2 cup fresh breadcrumbs
  • Olive oil for the pan if necessary
  • 3/4 teaspoon sea salt
  • Freshly ground black pepper
  • 4 eggs A handful of micro-greens for garnish
