CrispyPork, Mango and Eggplant Binagoongan is a dish/appetizer made withcrispypork chunks, sweet Philippine mangoes, tomatoes, grilled eggplants and white onions dressed in a sweet salty sautéed fermented shrimppaste
Serve garnished with cilantro leaves. Brush the cut sides with 1 1/2 tablespoons oil. Brush the skins with 1/2 tablespoon oil. Stir in pork, shrimp, rice, 2 tablespoons curry paste, fish sauce, brown sugar, lime zest and egg.
