I’ve mostly used it to make zucchini noodles, but I wanted to try it withsweetpotatoes. Any pasta dish can now be made low carb with veggie noodles, you can make your own curly fries, and you can make amazing salad toppers with beets and carrots
Baked until light and crispy, they cover the baking sheet like an intricate web of salty sweet. Rather than frying the fries, they are tossed in a light amount of olive oil infused with crushed garlic and seasoned generously with salt and pepper
I served it with Spaghetti Aglio Olio and Garlic Bread. Heat sufficient oil in a large pan, deep fry the potato wedges until it turns golden brown on both sides and well cooked

You have to start with cooked sweetpotatoes, and that is the most time-consuming part of the entire process, waiting for them to cook when all you want to do is stuff piping-hot, crispy cakes into your pie-hole
To balance it with some sweetness, I added in coconut sugar, which I love. Baste each one with the coconut butter mixture, then sprinkle on the spice blend
That night my mother-n-law was also over for dinner and got to enjoy my Egg Roll Stir FrywithCrispy Wontons and Sweet and Sour Sauce, it was a hit with us all
