It seems no coincidence to me that this thick and meaty stew is called chili, because it's always just what I'm longing for when the days are cold and dreary
But that was about to change when I decided to make the low calorie beefandmushroomstew. I usually eat beef in the form of steak and more specifically sirloin steak and have rarely eaten beef in a stew
I titled this recipe “BeefStew with Crisps andMushroom” and elected not to include the word “chips” because this beefstew is given a crunch not only by homemade sweet potato chips, but also baked croutons and crispy pancetta
Add mushrooms last hour before serving. Nothing better than Hot Homemade BEEFand NOODLES. Both my Mom andGrandma made this recipe for years and to this day when I get homesick and miss being a kid I like to make this up
Imagine beef chunks seared, then stewed to tender perfection, low and slow in a CrockPot. Imagine that beefstew spiced to perfection with garlic, re-hydrated peppers, cumin, corianderand Mexican oregano (just for starters)
