This meant I would be in the market for a new crockpot – OR – pressure cooker as the case may be. Just the other day I used it to make a delicious batch of Instant PotLoadedBakedPotatoSoup, but let me tell you a little back story…
In a large pot over medium-high heat, sauté butter and garlic. Whisk constantly, until slightly thick, about 5 minutes, then add potatoes and season generously with salt and pepper. Cook potatoes until creamy and tender, 25 minutes
CrockPotPotatoSoup (Adapted from Meatless Meals for Meat Eaters). I did not make the soup in the crockpot since, I put it up, after work but I can see this working out, in the future

Pour over potatoes, ham and carrots and tuck the bay leaves into the crockpot as well. I had some leftover ham, in the freezer, from New Year's and thought it would be perfect in potatosoup
Add diced potatoes, onion, carrot, ham, thyme, parsley, pepper & broth to a crockpot. Remove 2-3 cups of the potatoes/carrots and mash, then return the mashed mixture to the crockpot
And while I certainly would not proclaim this loadedbakedpotatosoup healthy, I will say I found some ways to lighten it up a bit without sacrificing one bit of flavor
Add diced potatoes, diced onion, minced garlic, bacon, parsley and chicken broth to the slow cooker. Once the soup has cooked, add butter to a medium saucepan over medium heat and melt
Today we are featuring BakedPotatoSoup. I garnished with shredded cheddar cheese and bacon bits, but you could garnish with any bakedpotato topping for a twist
