  • Serves: 6-8 people (*note: I made a HUGE batch for a 4th of July party, so feel free to cut this in-half if serving to a smaller crowd)
  • Ingredients for salad
  • 2 bags of broccoli slaw mix (found near the bagged salads in grocery store)
  • 2 (3-ounce) packages of ramen noodles, crumbled (you will not use the seasoning packet)
  • 2 avocados, peeled, pitted and diced
  • 2 cups of diced mangos (note – buy them pre-sliced, buying them fresh and dicing them up is SO much work. If you are going to buy them pre-diced, make sure you don’t include the syrup into the mixture…it makes it too sweet)
  • 1 1/2 cups of sunflower seeds
  • 1/2 cup of chopped cilantro
  • 1 cup thinly-sliced almonds
  • 1 cup thinly-sliced green onions (scallions)
  • Asian honey vinaigrette (see ingredients below)
  • Ingredients for vinaigrette
  • 1 1/3 cup vegetable oil (or any cooking oil)
  • 2/3 cup honey
  • 2/3 cup rice wine vinegar
  • 4 teaspoons soy sauce
  • 1/2 teaspoon sesame oil
  • pinch of salt and black pepper
