  • 2 packages ramen noodles, crumbled (discard seasoning packets, will not use)
  • 4 cups shredded cabbage
  • 2 carrots, shredded
  • ½ cup dry-roasted peanuts, roughly chopped
  • ¼ cup green onions, thinly sliced
  • Asian Dressing (recipe follows)
  • FOR THE ASIAN DRESSING
  • 2 tbsp oil (vegetable or canola)
  • 1 tbsp sesame oil
  • ¼ cup vinegar (rice or white wine)
  • 1 tbsp soy sauce, low sodium
  • 1 tbsp brown sugar
  • ¼ tsp black pepper
  • salt, to taste
