Ingredients

  • 3 large potatoes (3 lbs or 1.35 kg)
  • 1 large sweet potato
  • 2/3 cup coconut milk + more as needed
  •

  • 6 sun-dried tomatoes, soaked in hot water for 30 minutes and chopped
  • 3/4 cup French (Puy) or brown lentils
  • 1/2 teaspoon turmeric
  • 1 bay leaf
  • 2 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 medium carrots, diced
  • 2 medium parsnips, diced
  • 2 teaspoons ground cumin
  • 1/2 tablespoon ground coriander
  • 1 teaspoon garam masala
  • 1 teaspoon paprika
  • 1/4 teaspoon cayenne
  • 2 to 3 green or red chilies, seeded and finely chopped
  • 1/3 cup red wine, vegetable stock or water
  • 2 medium tomatoes, diced
  • 1 bunch fresh spinach, trimmed and roughly chopped
  • 2/3 cup fresh or frozen green peas (optional)
  • 1 teaspoon sea salt, or to taste
