Ingredients

  • 1 1/2 cups all-purpose flour
  • 3/4 cup white sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1 1/2 teaspoons white sugar
  • 1 teaspoon cinnamon
  • 1 large egg
  • 3/4 cup coconut milk
  • 1/4 cup vegetable oil
  • 1 tablespoon lemon juice
  • 3/4 cup fresh or frozen blueberries
  • 375 degrees. Grease 9 muffin tins, or use papers.
  • 3/4 cup sugar, baking powder, baking soda and salt in a bowl. Set aside.
  • 1 1/2 teaspoons sugar and cinnamon. Set Aside.
  • 9 muffin tins (or use an ice cream scoop) to about half-full. Use a clean teaspoon to sprinkle the cinnamon sugar on top.
  • 20 minutes, or until the muffins are puffed and golden. Cool slightly. Eat while warm.
