  • 2013 is all about getting out of our comfort zone, remember
  • 12 mini bundt cakes or 1 9-inch tube cake
  • 1¾ cups cake flour
  • 1½ teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • ½ cup dark cocoa powder
  • ¾ cup champagne, sparkling wine or presecco, or hot water
  • 7 large eggs, separated and at room temperature
  • 1¾ cups granulated sugar
  • ½ cup canola oil
  • 2 teaspoons vanilla extract
  • ¼ teaspoon cream of tarter
  • ½ cup dried cherries
  • ½ cup dark chocolate chips
  • 1 (16 ounce) bag frozen cherries, thawed
  • ¼ cup honey
  • 1 tablespoon cornstarch
  • ¼ cup granulated sugar, optional
  • ¼ cup chilled champagne
