  • 2 onions (1 onion and 1 baby leek), thinly sliced in semi-circles
  • 2 carrots, grated
  • 500 g chicken thigh mince
  • small cabbage or 1/2 of larger cabbage, shredded to your liking (we like it reasonably chunky)
  • 1-2 table spoons of olive oil (I use 1 table spoon of olive oil and 1 table spoon of unsalted butter)
  • salt and coarse black pepper for seasoning
