Ingredients

  • 1 large bunch broccoli (about 1 1/2 pounds)
  • 1 Tbsp. olive oil
  • 1 Tbsp. unsalted butter
  • 2 medium leeks, white and light green parts, thinly sliced
  • 1 medium baking potato, peeled and cut into 1-inch pieces
  • 2 cloves garlic, thinly sliced
  • 3 cups water
  • 3 cups of chicken or vegetable broth
  • 1/4-1/2 tsp salt
  • Freshly ground black pepper
  • 1/4 cup half-and-half
  • INGREDIENTS
  • 1 head cauliflower
  • 2 Tbsp. olive oil
  • 2 ounces pancetta, small dice
  • 1 onion, minced
  • 3 garlic cloves, smashed
  • 1 Tsp minced fresh rosemary or 1/2 tsp dried
  • 1 cup chopped fresh tomatoes or canned
  • 1 Tsp Kosher salt
  • 6 cups chicken broth
  • 1 medium potato, peeled and cut into a small dice
  • 1/2 cup tiny pasta shells
  • Freshly ground black pepper
  • Grated Parmesan cheese
