Ingredients

  • 1 cup cilantro, finely chopped
  • 1/4 jumbo white onion, finely diced
  • 4 small tomatoes, diced
  • 2 small green jalapeños, seeded, cut into short strips and snipped into small pieces
  • 2 garlic cloves, finely minced
  • 2 tablespoons lime juice
  • 2 handful soft hass avocados
  • 2 tablespoons “Pico de Gallo” juice (see recipe above)
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon lime juice
  • 1 tablespoon salt, to taste
  • 3 1/2 cups canned diced tomatoes
  • 1/4 jumbo white onion, finely diced
  • 3 tablespoons sunflower oil
  • 4 garlic cloves, minced
  • 1 1/2 cups long grain rice
  • 1 tablespoon ground cumin
  • 2 tablespoons gluten-free and vegan vegetable bouillion (i.e., Organic Gourmet Vegetable Bouillon)
  • 3. Heat oil medium heat in a heavy skillet
