Ingredients

  • 1/3 of a Cup of Olive Oil
  • 2 Tablespoons of Balsamic Vinaigrette
  • 1 Tablespoon of Honey
  • 2 Cloves of Garlic, minced
  • Salt and Pepper, to Taste
  • 1 Small Onion, Chopped
  • 2 Garlic Cloves, minced or chopped
  • 1 Tablespoon of Olive Oil/Butter
  • 2 Cups of Quinoa, Cooked ( I used tri-color, cause it’s pretty)
  • 2 Cups of Shredded Chicken
  • Salt and Pepper
  • ½ Cup of Toasted Pecans (always toast your nuts!)
  • 1 Cup of Dried Cranberries
  • 4 Tablespoons of Parmesan Cheese
