Donuts Recipes that are Healthier – Baked or Fried Kids Love them

Ingredients

  • 1 cup milk of choice (we prefer almond milk)
  • 5 tsp yeast powder or 2 packets & a pinch (or you can substitute sourdough starter by doing 2 & 1/2 tsp starter & 2 & 1/2 tsp flour mixed into gooey dough, in need to be kinda a thick paste only slightly runny, so add more starter or less starter if needed).
  • 2 cups flour of choice (& extra for kneading for surface & hands)
  • 1/2 tsp natural unrefined salt
  • 1 pinch of organic whole unbleached sugar (you can use Yacon syrup but again mix with flour so it is not so much liquid)
  • 1/2 cup of leftover mashed potatoes warmed (or leftover baked potatoes scrapped out & mashed).
  • 2 tbsp raw coconut oil, expeller pressed coconut oil (raw has the coconut taste, expeller does not) or Palm shortening.
  • 1 pinch of sugar stir& let sit

  • 1/4 cup of sugar, mix well, then in then add milk mixture & the 2 TBSP of oil.
  • 10 minutes while you also get the oil ready. Pour about a half inch of oil into a cast iron pan (or whatever pain you normally use for shallow frying), the oil needs to be about 360 degrees so Med to Med High. Do not let oil start to smoke.
  • 1/4 cup flour of choice
  • 1/4 tsp baking soda
  • 3 tbsp raw honey (or yacon syrup, molasses, or maple syrup)
  • 3/4 tsp vanilla extract
  • 2 tbsp coconut oil room temp
  • 1 tsp‪ coconut water vinegar or apple cider vinegar
  • 1 Generously grease a donuts mold/pan, we do not have one so use a muffin pan & just eat donuts that are solid instead of have a hole in them. But you can also use a frosting bag to put frosting in the middle or whipped cream when they are solid with no hole.
  • 2 Combine dry ingredients into mixing bowl number one, mix well. Now in mixing bowl number two combine all wet ingredients other than egg whites & mix well. Combine both bowls by mixing the wet with dry& then set the bowl to the side.
  • 3 In another bowl beat the ‪egg whites until peaks form (don’t be afraid, you will see the peaks). Next gently fold the egg whites into the other mixing bowl of batter.

  • In a mixing bowl add
  • 1 cup powdered sugar (make your own powdered sugar with 1 cup whole unbleached sugar & 1 tsp organic corn starch or potato starch, put in blender or food processor).
  • 2 tbsp of the milk mixture you set aside (for thinner glaze add more, for thicker glaze add less).
  • 1/4 tsp of lemon juice (or apple cider vinegar).
  • 1/4 tsp of vanilla extract
  • Use the same milk mixture from above.
  • 1 cup powdered sugar
  • 2 tbsp Organic baking cocoa
  • 3 tbsp of milk mixture
  •  
  • Another chocolate glaze that hardens
  • 1/2 cup organic baking cocoa
  • 1/4 cup unsweetened/ semi sweet ‪chocolate chips
  • 2 tbsp coconut oil
