Ingredients

  • 1 tbsp chia seeds (or ground flax) + 3 tbsp water
  • 1/2 cup coconut oil, melted
  • 1/4 cup raisins
  • 1/2 cup coconut sugar
  • 1/2 tsp peppermint extract
  • 1/3 cup non-dairy milk (I used Silk Light Soy)
  • 1 cup all purpose flour (I used a Bob's Red Mill)
  • 1/3 cup brown rice flour
  • 1/3 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • pinch, salt
  • 1/2 cup chocolate chips (vegan)
