I made this ChocolateMousseCake for a friend’s birthday party last weekend and it was a great hit. So this time I stick with semi-sweet chocolate and skip adding coffee to the cake batter (as I did on the first one) and the method is a bit different too, I have to say this is the easier method for me and I plan to stick with it
Repeat with milk chocolatemousse, piping on top of the bittersweet chocolatemousse. Before serving cakes, remove parchment collars, and garnish with chocolate curls
But then of course you will have to rename it Chocolate Almond Mousse. You don't really taste the coffee, but it enhances the flavor of the chocolate, so don't omit it
