Easy Enchilada Mac and Cheese (Slow Cooker or Baked). This recipe is for a fuckton of mac & cheese. I made it for Easter dinner & I had 12 people over & everybody left with mac & cheese. 32 oz grated cheese (I used 1/2 pepper jack & 1/2 Mexican blend but sharp cheddar would be good, too). 2 cups milk (I used unsweetened almond milk) – plus more – in the event your mac & cheese gets too dry. 8 oz cream cheese. Bake for 30-45 minutes or until the cheese is melted & bubbling at the sides. 32 oz grated cheese. 8 oz cream cheese
Add the cheese and stir until the residual heat has melted it into the sauce. If you pasta has cooled too much to melt the cheese, keep the burner on low as you stir the cheese into the sauce
This mac and cheese recipe is one pot stove top easy. Like I said, easy. Whether it is the main part of the meal or just a tasty side dish you can easily do better than a box mac and cheese

i didn't get any of the mac 'n cheese i made for the party but i was told it was good. and the other recipes called for canned cheese soup, processed cheese or cream cheese and i just wasn't feeling it

This makes a LOT of mac and cheese, but I don't mind leftovers. When I got a review copy of the cookbook Hot & Cheesy by Clifford A Wright, I paged through all the options, gave some serious thought to pizza, calzones, frittatas, and a whole lot of delightful sandwiches, but in the end it was the mac and cheese recipe that I decided needed to be made
