Although it still doesn't feel like it, summer is almost technically here on the east coast and I thought I would share some fun treats I have recently created
I had a great time teaching my Lowcarb southern class last weekend and when we got to talking about quick andeasytreats I mentioned this Chocolate Mousse
Here's an easy recipe with ground beef and broccoli slaw. To toast pine nuts, I placed them in a heavy pan, over medium-low heat, and tossed and shook the pan to keep them moving, until they started to show some browning and until they started to smell toasted and more intense
Because they are crustless, they are lowcarband gluten free. These quiches are very simple to make with only a few ingredients and can be made in advance and stored in the freezer or refrigerator

If it’s still too hard, cover the dish and return to the oven until pasta is al dente. In the prepared dish (or in a separate bowl), stir together cooked chicken, tomatoes, zucchini, corn, uncooked pasta, chicken broth, 1 ½ cups of mozzarella cheese, about half of the basil leaves, minced garlic, and salt. Cover the dish tightly with foil and bake for 40 minutes. Bake uncovered for 5-10 more minutes (or until cheese is melted and pasta is tender)

This dressing is so easyand much healthier than the store bought dressings. To keep this a lowcarb Italian Dressing recipe, I used Bragg’s Apple Cider Vinegar which has no added sugar and a boat load of health benefits
