  • 4 large zucchini 1 small onion, chopped 2 garlic cloves, minced 1/2 cup sun dried tomatoes, packed in oil 1/2 cup kalamata olives, sliced 1 cup garbanzo beans, rinsed and drained Sea salt and lemon juice to taste Handful feta cheese Handful candied pecans, chopped
  • 1 tablespoon and sauté onion. Add raw zucchini noodles and stir for about 5 minutes over medium high heat. Add in sun dried tomatoes, olives, garbanzo beans, sea salt and lemon juice. Add in additional seasonings of choice. Top with feta cheese and candied pecans. Serve immediately!
