  • 1 lb boneless, skinless chicken thighs -- cut into 3/4-inch pieces 2 Tbsp coconut aminos, divided 2 Tbsp sesame oil, divided 2 Tbsp tapioca flour 3 Tbsp olive oil 2 eggs, whisked 3 garlic cloves, minced 1 Tbsp fresh grated ginger 1 bunch of scallions, chopped and divided into white and green parts 1 cup shredded carrots 3 cups pre-cooked cauliflower rice (for convenience try Trader Joe's Organic Riced Cauliflower) 1 Tbsp rice wine vinegar Salt + pepper, to taste Optional: Serve topped with whole fried eggs Instructions
