Ingredients

  • 1¾ cups all purpose flour
  • ¼ teaspoon baking soda
  • 1½ teaspoons ground ginger
  • 1½ teaspoons ground cinnamon
  • 1/8 teaspoon ground cardamom (use a mortar and pestle to crush the seeds from 3 cardamon pods into a powder, if you prefer)
  • ½ teaspoon salt
  • 5 ounces unsalted butter, at room temperature
  • ½ cup light brown sugar
  • ¼ cup white sugar
  • 1 whole egg, at room temperature
  • 1 teaspoon freshly grated lemon zest
  • 3 ounces chopped pecans
  • 2 ounces candied ginger, sliced thin
