  • 1 tbsp Olive Oil
  • 2 Leeks, white and green, sliced finely
  • 1 Large Carrot, diced
  • 1 1/2 tsp Dried Thyme
  • 3 cups Chicken Meat, torn or cut into cubes
  • 1 1/2 cups Frozen Peas
  • 1/4 cup Flour
  • 2 1/2 cups Stock (Chicken or Veggie)
  • Juice of 1/2 Lemon
  • 1 sheet Puff Pastry
  • 1 Egg, beaten
  • Salt and Pepper
