  • 1 Large bell pepper, medium dice
  • 1 cup edemame beans
  • 2 Large garlic cloves, minced
  • 2 Tablespoons grated fresh ginger
  • 3 Cups of cooked brown rice (I used brown Jasmine rice)
  • 2 green onions, chopped
  • 1/2 cup cashews, roasted
  • Sauce
  • 3/4 cups vegetable or chicken broth
  • 3 Tablespoons soy sauce
  • 1 tablespoon light brown sugar
  • 1 teaspoon sesame oil
