  • EGGPLANT AND ZUCCHINI PARMESAN

  • Prep time: approximately 15 minutes Bake time: 40 minutes
  • 1 1/2 cup wheat germ
  • 1 1/2 cup panko crumbs
  • 1 teaspoon salt (plus additional for salting the eggplant)
  • 1/2 teaspoon black pepper
  • 2 teaspoons garlic powder
  • 1 egg 1 cup egg whites
  • 1 large eggplant
  • 1 large zucchini
  • olive oil spray
  • 1 1/2 cups canned tomato puree
  • 1/4 - 1/2 cup Parmesan cheese
