Ingredients

  • 1 large eggplant
  • 1 egg white
  • 1 Tbsp water
  • 2 slices whole wheat bread
  • 1/4 cup freshly grated Parmesan cheese
  • 1/4 tsp pepper
  • 5 fresh basil leaves
  • 1 1/2 cup tomato sauce
  • 1/2 cup goat cheese (or fresh mozzarella)
  • 15 minutes You will see juices coming out of them, and they will look moist
