Eggplant was often on our menus as were lots of vegetable dishes. But today I bring you eggplant. Given the abundance of my eggplant plants, I made this recipe before I left, I guess in anticipation of what I'd find in China

or simply use water instead of broth/stock. Eggplant in Garlic Sauce is delicious when done right. the thick gooey sauce full of flavor, the just-tender eggplant and garlic, the heat from the dry red chilies
Next time you are in the mood to make some kootu try adding this podia/powder in the end. Every time I make kootu (which I make most often), I usually follow the simple recipe and I substitute it with different veggies
The rice has to be cooked and the eggplant needs to be baked. Don't be afraid to really undercook the rice so it doesn't get mushy while it bakes with the eggplant
When I first saw this Asian eggplant with garlic oyster Sauce at Bams Kitchen I told myself I got to do that one as I am a big fan of vegetables dressed with oyster sauce
